I’ve been a chef for over 40 years, my passion for food started at an early age, 14 to be exact. My passion is for real foods that are fresh in season and healthy for the body. When it comes to foods that meet what are arguably the four most important criteria – taste, nutritional value, ease of preparation and sustainability – Forever Oceans Kahala is top of my list. Kahala is delicious, whether you eat it raw or cooked, it is so versatile with every cooking method you can think of, it can be baked, broiled, grilled, and poached, even roasted whole and with so little work on your part, it never fails to turn out perfect each and every time. Who is Forever Oceans?

Forever Oceans is a next generation seafood provider who views technology as a solution for providing sustainable, highly nutritious seafood to the world. Our mission is to nourish the world with delicious seafood through eco-friendly innovation. Our vision is to revolutionize seafood for our health and our oceans. Forever. That’s why our slogan is “sustainably delicious!”

How do we raise your seafood?

Forever Oceans is unique in that we have combined expertise and technologies in engineering, infrastructure, biology, production, marketing, and more, to offer an integrated solution for environmentally friendly deep ocean mariculture. Our systems include mariculture systems for fish breeding and an offshore platform. Our production is streamlined through automation with robots who care for and monitor the fish with human oversight via remote communications. Our innovative technologies detect risks and allow us to operate with greater efficiency than traditional approaches, and with reduced operational, environmental risks. The result is a high-quality fish with more Omega 3 fatty acids than salmon or white tuna—all from a clean, healthy, and sustainable process.

What kind of fish do you raise?

Our process raises a healthy, nutritious fish. We call them “Kahala” which literally means “Cherished Land” in Hawaiian but is also the local name for an amberjack (its scientific name is Seriola Rivoliana). It is a delicious and versatile fish that is ideal for everything from sushi to fish tacos. Kahala is our first, of many coming fish varieties that we will offer. Our technology platform is species agnostic.

What are the Health Benefits of eating Kahala?

Kahala is one of the most nutritious foods on the planet. This fatty fish is loaded with nutrients that may help reduce risk factors for several diseases. Kahala is one of the best sources of omega-3 fatty acids EPA and DHA, which have been credited with several health benefits such as decreasing inflammation, lowering blood pressure, and reducing the risk of cancer. Eating two servings of Kahala per week can help you meet your omega-3 fatty acid needs. Kahala is also rich in protein, which is an essential nutrient that we must get from our diet. Protein plays a few important roles, including helping the body heal after injury, protecting bone health, and maintaining muscle mass during the aging process.

The calories in Kahala per 200g(1fillet) is 258 calories. Kahala is calculated to be 129Cal per 100 grams making 80Cal equivalent to 62.02g with 42g of mostly protein、8.4g of fat、0.2g of carbohydrates in 200g while being rich in vitamins and minerals such as Vitamin B12 and Selenium.

Kahala is also an excellent source of B vitamins, which help turn food into energy, and reduce inflammation that can lead to heart disease. B vitamins promote optimal functioning of the brain and nervous system. Kahala is also high in potassium, which helps control blood pressure, which in turn helps reduce the risk of stroke.

Where do you raise these Kahala?

We raise our fish in natural, deep ocean environments where the waters support healthy growth with no impact on shorelines or land and no threat of pollution in the water that would negatively impact the fish or those who consume it. Our first deep ocean operations are off the coast of Panama and Indonesia.

Delicious and Versatile Kahala

Kahala is incredibly delicious; it has a unique, buttery flavor with a less fishy taste than many other fatty fish. It is also extremely versatile. It can be steamed, smoked, grilled, baked, or poached, and it can be served raw in sushi and sashimi. Kahala is a nutritional dynamo that provides an array of impressive health benefits. Including this fantastic fatty fish as a regular part of your diet can improve your quality of life – it’s a natural choice for your health and well-being.

Forever Oceans Kahala Dynamite Poke

Serves 4

What is poke? Pronounced poh-KAY and rhymes with okay. Generally speaking poke would refer to raw chunks of seafood, normally tuna which has been marinated in soy sauce and sesame oil, generally mixed with onions and sometimes spiced up with chilies.

Originating from Hawaii, you can pick up a bowl of freshly made poke at any food store, restaurant or even the local gas station. The ingredients used are endless, including poke made using octopus, poke that is dressed with a creamy mayonnaise and poke garnished with kimchi or wasabi, resulting from the strong influences of Japanese and traditional Korean cuisines.

For a traditional ahi poke I love to use Hawaiin Kahala but you can use yellowfin tuna or even wild salmon if you prefer. The most important factor is using very fresh sushi or sashimi-grade fish. Check with your local fishmonger specifically for sushi-grade fish when you plan on making poke or any dish using raw fish. Experiment with your own seasoning and other elements that bring flavor and texture is really to your personal preferences. I enjoy a classic soy sauce and sesame oil seasoning and dressing the poke with crunchy seaweed and roasted peanuts for that extra crunch and fabulous mouth feel. Enjoy!

8oz Forever Oceans Kahala (alternatives, salmon, tuna)

¼ cup finely diced red onions

1 small chili, roughly chopped

1 tablespoon roughly chopped roasted peanuts (option)
Dynamite Sauce:

¾ cup mayonnaise

1 tablespoon Sirracha
