Chicken Stew with Apples, Golden Raisins & Butternut Squash

An apple a day:
Apples have been grown for thousands of years in Asia and Europe and were brought to North America by European colonists. There are more than 7,500 known varieties of apples. Chicken Stew with Apples, Golden Raisins & Butternut Squash
Serves 4

Ingredients:
2 tablespoons olive oil
8x boneless chicken thighs
1 onion, peeled and sliced
2 garlic cloves, peeled and minced
2 apples, cored and quartered
4 tablespoons balsamic vinegar
½ cup white wine
2 tablespoons golden raisins
2 cups low in sodium chicken stock
2 cups butternut squash, cut into cubes
2 cups green beans
2 tablespoon freshly chopped parsley

Pre-heat oven to 380’f

How to make:

Take a large oven proof frying pan and place over a medium high heat on the stove. Add the oil, when hot add the chicken thighs and cook until golden brown on all sides, approx. 5 minutes, remove from the pan and place on dish paper.

Add the sliced onions, apples and garlic to the pan and cook for 3 to 4 minutes, then add the vinegar, wine, golden raisins and stock, bring to a boil then add the butternut squash and chicken thighs.

Place the pan into the oven and cook for 15 minutes, then stir in the beans, cook for a further 10 minutes. Remove the pan from the oven and sprinkle over the chopped parsley and serve.
