Home-Made Raspberry Frozen Yoghurt Ice-cream

Yes, you can make homemade frozen yogurt ice-cream and believe it or not, you can make it using just three ingredients and no ice cream machine! And it takes less than five minutes to prepare, and it only contains natural sugars derived from fresh fruit and local honey. This is an absolutely easy dessert that could not be simpler, plus, you won’t end up with icy, hard frozen yogurt. I made sure the results are smooth, scoop-able and delicious before sending out this recipe.

Chef tips:

Use a good quality Greek yogurt, which is high in protein, my favorites are Chobani and Siggi’s because they’ll give you a creamy texture once frozen.

I also recommend plain yogurt with no added flavors or added sugars.

Please note that the honey in this recipe is not just for sweetness; it’s what makes your frozen yogurt scoop-able. Sugar in a liquid form is what stops ice crystals forming and keeps the yogurt soft.

Home-Made Raspberry Frozen Yoghurt Ice-cream
Serves 6

Ingredients:
3 cups of fresh raspberries
1 tablespoon of local honey
2 cups good quality Greek yoghurt

How to make:

Take a fork and lightly squish two cups of the fresh raspberries.

Take a large bowl and fold the squished raspberries and honey through the Greek yoghurt, leaving some bits unmixed so it makes a swirly pattern. Place some plastic wrap tightly over the bowl and place into the freezer for at least 3 to 4 hours.

Once frozen, scoop the yoghurt into 6 bowls and top with the remaining cup of fresh berries.
