Quick & Easy Spicy Chicken Noodles

If you’re like me, you don’t want to spend all evening in the kitchen making dinner. People often say “Mark you’re a chef, it must be easy for you to knock up meals every night for the family, I bet it takes you minutes”. The meals I prepare and make for the boys always revolve around whole foods or as I like to call them “one ingredient foods”. Foods that have not been overly processed, such as fresh vegetables, fruits, whole grains, beans, seeds, nuts and lean proteins such as meat and fish.

After dropping off James at school in the morning, then heading to work, working all day in the kitchen or attending meetings or giving presentations, then driving home, my days are easily 10 to 12 hours long. Then I hit the gym followed by the kitchen, to make dinner. So yes the meals I make, take 20 to 30 minutes from start to finish. So if you’re looking for quick, healthy and easy to make recipes, follow along, enjoy the time in your kitchen, knowing that the reward will be a delicious meal that all the family will love. Quick & Easy Udon Noodles
Serves 4

Ingredients:
12oz udon noodles
½ cup low sodium tamari
¼ cup hoisin sauce
2 tablespoons sesame oil
12oz free range organic ground chicken
Freshly ground black pepper
1 red bell pepper, seeded and cut into thin slices
1 yellow bell pepper, seeded and cut into thin slices
1 inch fresh ginger, peeled and grated
1 medium size Thai red chili, seeded and finely chopped
2 green onions, roughly chopped
1 tablespoon sesame seeds or roughly chopped roasted nuts (you choose)

How to make:

Cook the udon noodles according to package directions.

Take a small bowl and combine the soy sauce, hoisin sauce with ¼ cup of water.

Place a large wok or skillet over a medium high heat on the stove. Add the sesame oil, when hot add the ground chicken. Season with black pepper and brown all over, breaking it up as it cooks, about 5 minutes.

Add the bell peppers, ginger, and Thai red chili, and cook for a further 2 to 3 minutes. Pour in the soy sauce mixture and bring the mixture to a simmer and cook until the sauce nicely coats the ground chicken, about 3 to 5 minutes.

Drain the noodles and then stir the noodles into the chicken mixture, remove the wok from the heat. To serve, sprinkle over the green onions and sesame seeds or nuts and serve.
