Spicy Asian Chicken

Who doesn’t little a spice in their lives every now and again? Dinner is a good place to add some spice to your day. This dish is so easy to make, and looks like a delicious creation from an authentic Asian restaurant. With fresh healthy ingredients, you know the taste is amazing as well.

Ingredients:
4 tablespoons vegetable oil or sesame oil
1 medium onion, peeled and finely chopped
2 whole, dried bird’s eye chilies (Add more if you like it hot.)
6 organic free-range chicken thighs, boneless, skin removed, cut into chunks
2 inches of fresh ginger, peeled and grated
4 garlic cloves, peeled and minced
3 tablespoons low sodium soy sauce
3 tablespoons rice wine vinegar
2 tablespoon local honey
1 green onion, finely sliced to garnish
Freshly steamed or boiled brown rice to serve

How to make:
Place a wok or large frying pan over a medium to high heat, and add the oil. When the oil is hot, toss in the onions and chilies. Cook for 2 minutes.

Add the chicken and cook for 8 to 10 minutes or until just cooked through. Next, add the ginger and garlic, and cook for one minute. Finally, stir in the soy sauce, vinegar and honey. Simmer for 2 minutes. To make it even more nutritious, add some steam broccoli or stir-fried vegetables.

Place the hot rice into four serving bowls, spoon over equal amounts of chicken, top with the green onions, and serve.
