Quick & Easy Sesame Slaw


Quick & Easy Sesame slaw
Serves 4 to 6

This is one of those recipes that came about because I needed to use up left overs that won’t last much
longer in the fridge. When you suddenly find you have half a red cabbage, a couple of carrots, half a red onion, one lime and a few tablespoons of mayonnaise, what do you do? You mix them all together, and serve them as a side with everything from grilled tempeh to tofu, fish or chicken.

Ingredients:
1 small or half large red cabbage, shredded
2 carrots, washed and shredded
½ large or small red onion, peeled and shredded
3 tablespoons olive oil mayonnaise
1 lime, juice and zest of
1 tablespoon sesame seeds
1 tablespoon sesame oil

How to make:
Mix together all of the ingredients and season to taste. Store in the refrigerator for up to 3 days or serve immediately as a tasty accompaniment to most any main dish.
