Coffee Fix


Funny thing, I never drank a great deal of coffee until I arrived in the states. Back home in England, the day certainly didn’t start until you had a cuppa hot tea. Now coffee is something I look forward too, as I get back from the gym, shower, dress. To help make sure I got out of the house and to work on time, I came up with my morning coffee fix. This can actually be made the night before and left in the fridge until the next day. Give it a when you pull it out of the fridge, and you are out of the door with your Coffee Fix on the Go. This also makes the perfect snack between breakfast and lunch.

Dairy free, as it’s made with filtered water, plus a banana for a good source of potassium and other fabulous nutrition. You can strike one portion of fruit off your daily requirement in one quick easy delicious way. Do you realize that bananas provide 3 to 4gms of fiber each and are low in calories. Let’s not forget the major role potassium plays in the body as it regulates fluid, electrolyte balance and maintains cell integrity. Choose your favorite expresso and just blend everything together, how easy it that. Got to run – bye for now!

Coffee Fix on the GO!

Serves 2

Ingredients:

2-3 shots espresso, chilled (depending on how strong you like your fix)

¼ cup raw almonds

1 cup filtered cold water

1 Banana, peeled, flesh sliced

½ cup ice (optional)

1 to 2 tablespoons maple syrup (only if you’re not sweet enough? optional)

How To Make:

In a vitamix, combine all the ingredients together, blend on high until smooth, about 30 to 40 seconds. Pour into 2 glasses over ice if you wish, serve and enjoy.

  2. Just tried your coffee and banana fix. Yum! So easy! I had some frozen bananas that I used instead of ice-just as good too. Thanks for the idea because I needed a change up from my usual morning fruit smoothies.
